Raclette Potatoes
A perfect autumn / winter dish - made with Australian Raclette or other Australian washed-rind cheeses such as those listed below.
- 500g Kipfler potatoes
- 200g Raclette - Heidi Farm or Maleny
- Cornichon and/or pickled onions to serve
- Salt and freshly ground pepper to taste
Method:
- Wash potatoes and cook whole in boiling salted water until tender, drain and then cut into bite sized pieces.
- Preheat griller to medium.
- Arrange potatoes in small metal handled fry pan (or grilling dish).
- Thinly slice raclette and lay over potatoes.
- Grill raclette over potatoes until bubbling and slightly golden.
- Remove from the grill and serve immediately with cornichon. Serves: 6
