Raclette Potatoes

A perfect autumn / winter dish - made with Australian Raclette or other Australian washed-rind cheeses such as those listed below.
  • 500g Kipfler potatoes
  • 200g Raclette - Heidi Farm or Maleny
  • Cornichon and/or pickled onions to serve
  • Salt and freshly ground pepper to taste

Method:

  1. Wash potatoes and cook whole in boiling salted water until tender, drain and then cut into bite sized pieces.
  2. Preheat griller to medium.
  3. Arrange potatoes in small metal handled fry pan (or grilling dish).
  4. Thinly slice raclette and lay over potatoes.
  5. Grill raclette over potatoes until bubbling and slightly golden.
  6. Remove from the grill and serve immediately with cornichon.
