Caprese Salad
The taste of summer, with the unbeatable flavour of Australian hand made Buffalo Mozzarella from Vannella Cheese Company or Shaw River Buffalo Cheese.
- 2 x Large ripe tomatoes
- 1 x Buffalo Mozzarella (approx 150g)
- 10 x Basil Leaves - torn
- Extra Virgin Olive oil
- Aged Balsamic Vinegar (optional)
- Salt flake & fresh cracked pepper to taste
Method:
- Slice tomatoes into rounds and arrange on a platter.
- Either slice or tear the mozzarella and arrange over the tomatoes.
- Tear basil leaves and scatter over the tomatoes and mozzarella.
- Drizzle first with a little balsamic and then extra virgin olive oil.
- Season with salt and fresh ground black pepper. Serve with crusty bread or to accompany a barbeque feast.
