Caprese Salad

The taste of summer, with the unbeatable flavour of Australian hand made Buffalo Mozzarella from Vannella Cheese Company or Shaw River Buffalo Cheese.
  • 2 x Large ripe tomatoes
  • 1 x Buffalo Mozzarella (approx 150g)
  • 10 x Basil Leaves - torn
  • Extra Virgin Olive oil
  • Aged Balsamic Vinegar (optional)
  • Salt flake & fresh cracked pepper to taste

Method:

  1. Slice tomatoes into rounds and arrange on a platter.
  2. Either slice or tear the mozzarella and arrange over the tomatoes.
  3. Tear basil leaves and scatter over the tomatoes and mozzarella.
  4. Drizzle first with a little balsamic and then extra virgin olive oil.
  5. Season with salt and fresh ground black pepper.

  6. Serve with crusty bread or to accompany a barbeque feast.
